A mix which does not become grey and keeps for a long time without any changes to its organoleptic properties. It is suitable for pasteurization and slow drying and needs a high hydration compared to traditional flours. Ideal for both manual and machine preparations, it can be used without any special measures, even in extrusion.

Ingredients: Corn starch, Potato starch, Rice flour, Milk powder, Milk proteins, Guar gum, Dextrose, Hydroxypropylmethyl cellulose.

Ce mélange ne grisonne pas et se conserve longtemps sans altération de ses propriétés organoleptiques. Il convient à la pasteurisation et au séchage lent et nécessite une hydratation plus importante que les farines traditionnelles. Idéal pour les préparations manuelles et mécaniques, il s'utilise sans précautions particulières, même en extrusion.
